Chicken Cutlet


What you need:

Chicken1 lb
Potato (big)3
Onion (medium)2
Ginger1 piece (big enough)
Green Chilies5-6
Garlic4 pods
Coriander Leavesa handful
Bread crumbs or Rusk crumbs1 cup
Egg whitefrom 2 eggs
Pepper powder1 ½ tablespoon
Garam masala powder1 tablespoon
Saltas required
Oil1 cup

How to prepare:


Stage 1

Cook chicken and potato separately. Next, pour 4 tablespoon of oil in a frying pan and saute the cut onions until it turns light brown in color. Add chopped ginger, garlic and green chillies and cook for 1 minute. Add crushed potato and minced chicken and stir this with salt, turmeric and garam masala for 3-4 minutes. At the final stage add chopped coriander leaves and pepper powder. Chicken mix is ready.

Stage 2

When the chicken mixture get cool, make small balls from this and press it lightly to make oval shape - be sure, no cracks are formed. Dip them in egg whites and roll with bread crumbs. When you have 5-6 (or maximum that your pan can hold at a time) such cutlets, keep them in oil and deep fry.
You may serve the cutlets with a mix of cut onion, vinegar, green chilli and salt.

Chicken Thoran



Ingredients
Chicken2lb
Big red onion or shallots
Cut into thin slices

Cut along the length

Chili powder2 tablespoon
Turmeric powder½ tablespoon
Saltas required
Garam masala1 ½ tablespoon
Oil5-6 tablespoon
Curry leaf
Grated cocunut (crushed)½ cup

Preparation of Chicken Thoran

Clean and cut chicken into small pieces. Marinate the chicken with salt, turmeric powder and red chilly powder. Keep marinated chicken inside the refrigerator at least for half an hour.

Heat a pan and pour sufficient oil and saute onion till it gets the golden color. Add chopped ginger, garlic and green chili and saute it for some time. Put marinated chicken into the fried onion and stir it well. Close the pan with a tight lid and cook for 15 minutes in a medium flame.

Now stir chicken and add salt & garam masala. While continuing stirring, add crushed coconut. Check the salt and level of spiciness. Add more salt or chilies as required. Close the lid and cook for 10 more minutes. At the final stage (all water disappears at this stage), check if chicken got cooked well and add fresh curry leaves into this.

Chicken thoran makes a good combination with puttu, dosa, rice or chapathi.





                         

Vellarikka Moru Curry (Cucumber curry with Curd) വെള്ളരിക്ക മോര് കറി


Things You Need


Cucumber (cut into small pieces)1
Curd (beat until it is smooth)1 cup
Grated Coconut
Grind with 2 small onion and small piece of ginger into fine paste
½ cup
Ginger (chopped)  small piece
Garlic (chopped)3 pods
Shallots (cut into small pieces)2
Fenugreek seeds½ tablespoon
Green chilies (chopped)1
Chili powder½ tablespoon
Turmeric powder½ tablespoon
Oil2 tablespoon
Mustard seedsa pinch
Dried red chilies (cut into half)2
Curry leaf
Salt

Preparation

Cook the cut cucumber with salt , turmeric powder and chilly powder. Heat the pan and pour 2 tablespoons of oil. Crackle mustard seeds and add dried red chilies and shallots. Now add fenugreek seeds, chopped ginger, garlic and green chilies and saute for some time.

Cook ground coconut in a pan for 2-3 minutes. Put cooked cucumber and beat curd to the pan. Add salt and stir for 3 -4 minutes. Do not allow the curd to split it will spoil the taste of the curry. Don’t forget curry leaves.

Cucumber curd curry goes great with rice. Add a fish fry to the menu and all is set for a great meal.

Chemmeen Masala (Prawns Masala)
















Items Needed


Prawns1 lb
Red onion (large)1
Garlic5-6 pieces
Ginger (crushed)3 tablespoon
Green chilly (chopped)2
Curry leafas required
Chilly powder2 tablespoon
Turmeric1 tablespoon
Garam masalaa pinch
Cocum2 pieces
Tomato (large)2
Oil3 tablespoon
Mustard seed½ tablespoon
Pepper powderas required (optional)

Method of Preparation

Cook cleaned prawns in 4 tablespoon of water with cocum, turmeric powder and chilly powder. Do not over cook prawns - cooking for 6-7 minutes must be sufficient. 

Heat the tava and pour 3 tablespoon of oil. Crackle half a tablespoon of Mustard seed and then add red onion and salt. Once onion is cooked properly, add chopped green chilly and ginger garlic paste. Saute and then add cut tomatoes and wait till it is mashed.

Now add garam masala powder and cooked prawns. If u need more gravy, add half cup of coconut milk. At the final stage, adding curry leaf can increase the flavour. To make it spicy, add pepper powder as required.

Mushroom Stir Fry( Mushroom Thoran)


Mushroom stir fry is a magical vegetarian dish that goes well with rice or chapatti.

Ingredients


Mushroom 1 lb
Red onion1 (medium size)
Green chillies2
Garam masala powder1 table spoon
Garlic1-2 pieces
Turmeric powder¼ teaspoon
Chilly powder1 teaspoon
Grated coconut¼ cup
Saltas required
Mustard½ tablespoon
Red chilly1-2
Oil3 tablespoon
Curry leavesas required

Preparation

Clean mushroom and cut into small pieces - one mushroom may be cut to 3-4 pieces. Cut onion in to small pieces and crush it with garam masala and garlic. 

Heat oil in a non stick pan and add mustard seeds. After it crackles, add curry leaves and cut dried red chilles. Then add crushed onion, garlic and garam masala powder. Saute till it turns  to a golden color. 

Now add mushroom pieces and green chillies. Close the pan with a lid and let it cook for five minutes. 

Once cooked, add half grinded coconut with turmeric powder and chilly powder. Add enough salt and cook for 3-4 minutes.

Beans Sprouts Stir Fry (Thoran)

Bean sprouts contain lot of fiber and is low in cholesterol and saturated fat. Here is how I experimented with it as a side dish for Chapati or Rice.

What you need ?



Bean Sprouts1 lb
OnionHalf (cut into small pieces)
Green chillies2 - 3
JeeraHalf teaspoon
Garlic 1 piece
Turmeric powderHalf teaspoon
Pepper powderOptional
Shredded coconut4-5 teaspoon
MustardHalf teaspoon
Curry LeafAs required
Dried Red chilly2
SaltAs required
Oil2 teaspoon

Preparation


  1. Cut Bean sprouts into small pieces.
  2. Cut onion, chillies to required size.
  3. Lightly crush cut-onion, jeera and garlic together.
  4. Add 2 teaspoon oil in a frying pan and add mustard seeds.
  5. When mustard seeds crackle, add dried Red chilies and curry leaves.
  6. Then add crushed onion, jeera and garlic and saute for a while.
  7. Add beans sprouts into it and stir well with salt and turmeric.
  8. Cook for five minutes in a medium flame.
  9. At the final stage add grated coconut and if required add pepper powder according to your taste.
